Whether you are a Southerner or not,  Southern Fried Chicken is sure to be at the top of your favorite foods list.
This crispy  fried up culinary winner pleases the pickiest of palates! There is nothing better than a flavorful bite of crunchy on the outside, tender on the inside…perfectly seasoned fried chicken.
The aroma of chicken frying in a cast iron skillet takes me all the way back to my Southern roots. In the South, Sunday dinners have always meant fried chicken. But serving up fried chicken is a special treat any day of the week.
I like to jazz up this recipe with a little heat, but it’s an optional choice for those who prefer a less spicy version.  And Y’all, as far as Southern etiquette goes…it’s perfectly proper to eat fried chicken with your fingers.

Southern Fried Chicken Recipe


  • Buttermilk Mixture Ingredients:
  • 1 (3 lb) chicken cut into 8 pieces
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp poultry seasoning
  • 1 tblsp hot sauce (optional)
  • 2 cups buttermilk
  • Seasoned Flour Mixture:
  • 2 cups all purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper (optional)
  • For Frying:
  • 1 large deep cast iron skillet
  • vegetable oil or shortening ( about 2-3 inches deep or halfway up the chicken as it's frying)


  • Rinse the cut up chicken, pat dry and place in a large bowl.
  • Mix the Buttermilk Mixture together and pour over the chicken.
  • Cover and refrigerate for 6-8 hours.
  • Combine the ingredients from the Seasoned Flour Mixture and place in a shallow dish.
  • Remove the chicken from the buttermilk mixture (do not rinse).
  • Dredge each piece in the Seasoned Flour Mixture until well coated.
  • Place each piece on a plate.
  • Heat oil in the iron skillet to 350 degrees F.
  • Fry each piece for 10 minutes, turn over with tongs and fry 10-15 minutes or until chicken is done. *
  • Place on a wire rack with paper towels underneath to catch excess oil.
  • Let set for 5 minutes and serve.
  • * Leave some space between the chicken while it's frying. Check the chicken in between the frying times to prevent burning.
