This delicious Pesto Chicken Bake recipe is not only low carb but makes the perfect busy weeknight dinner.
A family favorite that has only a few ingredients, but is huge on flavor, and a great way to jazz up a boring weekday menu.
It’s great for people with busy schedules as it only takes 5 minutes to prep and 30 minutes to
bake. I personally use my favorite store bought
basil pesto for this recipe but fresh homemade would probably be even better…if you have the time.

Pesto Chicken Bake Low Carb Recipe
3 chicken breasts, cut in half horizontally
salt & pepper to season chicken
2-3 cloves finely minced garlic
2/3 cup basil pesto
1/2 cup Italian style cheese blend-shredded
Preheat oven to 375 degrees F
Cut 3 chicken breasts in half horizontally
Season both sides of chicken with salt & pepper
Spread 1/3 cup of pesto on bottom of 13x9 baking dish
Evenly distribute the garlic throughout the baking dish
Place the chicken on top of the pesto garlic layer
Top the chicken with remaining 1/3 cup of pesto
Cover dish with foil or lid
Bake for 25 minutes
Remove the foil and sprinkle the cheese evenly over the top
Bake uncovered 5 minutes or until cheese is melted
Spoon the sauce from the bottom of the pan over chicken
