Pesto Chicken Bake Low Carb

This delicious Pesto Chicken Bake recipe is not only low carb but makes the perfect busy weeknight dinner. 
A  family favorite that has only a few ingredients, but is huge on flavor, and a great way to jazz up a boring weekday menu.
It’s great for people with busy schedules as it only takes 5 minutes to prep and 30 minutes to bake.
I personally use my favorite store bought basil pesto for this recipe but fresh homemade would probably be even better…if you have the time.

Pesto Chicken Bake Low Carb Recipe


  • 3 chicken breasts, cut in half horizontally
  • salt & pepper to season chicken
  • 2-3 cloves finely minced garlic
  • 2/3 cup basil pesto
  • 1/2 cup Italian style cheese blend-shredded


  • Preheat oven to 375 degrees F
  • Cut 3 chicken breasts in half horizontally
  • Season both sides of chicken with salt & pepper
  • Spread 1/3 cup of pesto on bottom of 13x9 baking dish
  • Evenly distribute the garlic throughout the baking dish
  • Place the chicken on top of the pesto garlic layer
  • Top the chicken with remaining 1/3 cup of pesto
  • Cover dish with foil or lid
  • Bake for 25 minutes
  • Remove the foil and sprinkle the cheese evenly over the top
  • Bake uncovered 5 minutes or until cheese is melted
  • Spoon the sauce from the bottom of the pan over chicken
  • Serve
