This vegetable beef soup is tasty served the first time around, but gets even better as a leftover. So make sure you have enough for lunch the next day!

Easy Vegetable Beef Soup Recipe


  • 2 pounds lean ground beef
  • 1 med onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 2 large potatoes peeled and cut into 1" cubes
  • 2/3 cup frozen corn (or canned-drained)
  • 2/3 cup frozen english peas (or canned-drained)
  • 2/3 cup frozen green beans (or canned-drained)
  • 1 - 14.5 oz crushed tomatoes- with juice
  • 1 - 8 oz can tomato sauce
  • 32 oz beef stock (additional stock or water if needed)
  • 1/2 tsp salt- or to taste
  • 1/2 tsp black pepper- or to taste
  • 1 tsp Italian seasoning


  • In a large deep skillet add ground beef and onion
  • Cook on med heat
  • Cook until beef is brown and onion is translucent
  • Drain off the fat
  • Add the minced garlic, carrots, celery and potatoes
  • Cook for 2- 3 minutes
  • Add the beef stock
  • Scrape to deglaze the bottom of the skillet
  • Transfer skillet ingredients to a large soup pot
  • Add the rest of the ingredients and bring to a boil
  • Reduce the heat to low
  • Cover the pot and simmer for 1 hour or longer
  • Occasionally stir during the process
  • Serve when the potatoes are fork tender
