Cinnamon Roll Muffins Recipe

Cinnamon Roll Muffins have all the mouthwatering flavors of a cinnamon roll in muffin form. 
These soft, fluffy muffins with cinnamon swirls and a drizzle of icing on top are perfect for the weekend. They are quicker and easier to make than cinnamon rolls.

Cinnamon Roll Muffins Recipe

Ingredients

  • Muffin base ingredients:
  • 3/4 cup granulated white sugar
  • 1 large egg
  • 1 1/2 cups all purpose flour
  • 2 tsp baking power
  • 1/4 tsp ground nutmeg
  • 1/4 cup vegetable oil
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • Cinnamon swirl ingredients:
  • 1/2 cup light brown sugar
  • 1 tsp cinnamon
  • 3 tbsp butter, melted
  • Glaze ingredients:
  • 1/2 cup powdered sugar
  • 1/8 tsp vanilla
  • 1 tbsp milk (or additional)

Instructions

  • Preheat oven to 350F
  • Line a 12 cup muffin tin cupcake liners
  • In a large bowl, whisk together sugar and egg until combined
  • Add remaining BASE ingredients
  • Stir together, but don't over mix
  • Fill each cup 1/2 full of the batter
  • Reserve the other half
  • In a small bowl, mix together the CINNAMON SWIRL ingredients
  • Add a small amount to each muffin cup,
  • Swirl into the batter with a fork
  • Reserve the rest of SWIRL mixture for muffin top
  • Add remaining muffin BASE batter to cover the swirled mixture
  • Top with the remaining cinnamon SWIRL mixture
  • Use a fork to swirl into the batter without completely mixing it in
  • Bake for 18- 20 minutes
  • Let muffins cool
  • In a small bowl, whisk the GLAZE ingredients together until smooth
  • If glaze is too thick, add a little more milk
  • Drizzle glaze on the cooled muffins
