  • 1/2 cup unsalted soft butter (room temperature)
  • 1/2 cup granulated white sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup creamy or crunchy peanut butter
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt


  • Preheat oven to 350 degrees F
  • Cream butter, peanut butter, and sugars together in a bowl
  • Beat in egg and vanilla
  • In separate bowl sift flour, baking powder, baking soda, and salt
  • Stir into butter sugar mixture until well combined
  • Put dough in refrigerator for 1 hour
  • Scoop out dough with cookie scoop
  • Place each mound on parchment lined cookie sheets
  • Flatten each mound with a fork, making crisscross patterns
  • Bake for 9-10 minutes or until cookies start to turn golden brown
