Avocado Black Bean Salad

Ingredients

  • 1 can black beans - drained and rinsed (15 oz)
  • 1 avocado chopped
  • 1 lime - juiced
  • 2 green onions - chopped
  • 1/4 cup fresh cilantro - chopped
  • Dressing:
  • 2 TBLSP vegetable oil
  • 1/2 lime - juiced
  • 1/4 tsp ground cumin
  • 1/4 tsp salt

Instructions

  • In a small bowl whisk together all of the dressing ingredients and set aside.
  • In a medium sized bowl toss the chopped avocado in the juice of half of the lime.
  • Add the rest of the salad ingredients and the dressing and toss together gently.
  • Serves 4-5 people.
