Avocado Black Bean Salad makes a great, healthy side dish for a summer cookout . This recipe is versatile because it also serves as a great dip with your favorite chips.
This hearty salad is cool and refreshing, and perfect for a light lunch.
1 can black beans - drained and rinsed (15 oz)
1 avocado chopped
1 lime - juiced
2 green onions - chopped
1/4 cup fresh cilantro - chopped
2 TBLSP vegetable oil
1/2 lime - juiced
1/4 tsp ground cumin
1/4 tsp salt
In a small bowl whisk together all of the dressing ingredients and set aside.
In a medium sized bowl toss the chopped avocado in the juice of half of the lime.
Add the rest of the salad ingredients and the dressing and toss together gently.
Serves 4-5 people.
